I have a stable, comfortable, and mostly happy life. I received a quality education in whatever subjects I wanted when I was growing up. ## Nopal Tortilla Chips ### Recipe I grab a handful of tortillas and cut them into chip shape while the cast iron skillet was heating up. Fry the tortilla chips in your oil of choice. I used avocado oil. Flipped them with tongs every 3-5 minutes, flipped 5 or 6 times? probably like 25 minutes. Good even without salt. Season to taste. First [review]() Went back on the skillet after browning the beef, since the chips weren't crunchy enough. Another 10-15 minutes and they came out [perfect](). ### Notes I cut the tortillas into quarters and then cut half of the quarters into eighths. Just grabbed a few chips, no guac. ## Green Tomatillo Beef Rib Stew ### Recipe #### Ingredients This is what I used! Cook with what you have. **Protein** 1. 1.25 kg carne para deshebrar (beef flank? google this) 2. 0.5 kg beef short rib, came in 3 pieces **Salsa** 1. 300g peeled tomatillos 2. 3 small poblano peppers 3. a piece of large white onion (indeterminate size. less than an eighth of the onion.) 4. 2 large cloves garlic 5. a generous handful of cilantro 6. juice of 1 seedless lime 7. salt 8. oregano #### Instructions Step 1: Make Green Tomatillo Salsa In the same cast-iron skillet, I added my tomatillos and coarsely-chopped poblano peppers. *nb: Didn't deliberately de-seed the peppers since mine aren't too spicy. Still didn't add the seed cores ha.* Went slowly because I got distracted, but I added the chopped onion and peeled garlic cloves and let them brown. Once everything was browned mostly evenly, after ~10 minutes, I transferred all the veggies into the blender. Added coarse grain salt, oregano, cilantro, and lime juice. Season to taste, maybe I'll write an article about seasoning later. Cover the blender before you hit the start button. Blend until liquid; I let my ninja blender go the whole smoothie cycle to make sure it was well-(uhhh)blended. \[Optional] Step 2: Brown the meat Went for style points since I was going to write this recipe, so I kept the skillet hot after the veggies were done and immediately added the cubes of short rib. My butcher cut up the rib and the stew meat into medium to large cubes so I just added those directly. Took a bit to get them browned on all sides, and I was flipping them around every 5 minutes. *nb: Half of the skillet was noticeably hotter than the other. I thought the skillet was thick enough to minimize the difference in size between the two burners but maybe not?* Started the blender once all the beef was on the skillet. (*add description here, the sound, smell, and view were delicious*) Step 3: Add the beef and salsa to instant pot I used and instant pot but you could braise this in the oven or just let it slow cook on the stovetop. \[TODO: write an article about Ethan's video on braising (or just how I see it? might be better).] Set instant pot to pressure cook 1 hr. Make sure the vent is closed. Add ice cubes for style points. ### Notes ![](IMG_4095.jpg) ### Review Love it so much more than cold brew tonic! The ginger brings out the more acidic notes of the cold brew. Made today's drink a bit diluted (3 parts ginger ale 1 part cold brew?
